They take care from the variety of bean, to the fermentation and processing that the essence of bean is protected to produce the best flavor in their chocolate. The Kallari Chocolate cooperatives are run by the indigenous Quichua people in rural Ecuador. These small-scale cacao entrepreneurs decided to start their own cooperative for their chocolate after making a meager living from mass exportation with multinational companies. It pairs well Bourbon, Merlot, Cabernet sauvignon & Scotch. We are KALLARI a cooperative of 850 Kichwa families from the Ecuadorian Amazon, and we cultivate heirloom organic cacao trees to create this award winning dark chocolate.
